When it comes to decadence and dining, there are few things more symbolic than caviar, and at Michael Mina’s eponymous seafood restaurant within the Bellagio hotel, the renowned caviar parfait comes with equal helpings of flair and personalised service. Choose your desired caviar and garnishes from the wooden tableside cart with sleek marble topper, before it’s artfully combined and served on a mother-of-pearl dish. Your choice of vodka or champagne is served alongside.

Just steps away, you can relish your caviar in an entirely unexpected way during weekend dinner service at The Buffet at Bellagio. Indulge in unlimited servings of some of the world’s finest caviars – traditional, Ikura, and Tobiko – as well as all the other international gourmet dishes you’d expect from this buffet. The Gourmet Dinner service is available Friday and Saturday from 3pm until 10pm.

The evolution of upscale dining in Las Vegas presents some fantastic opportunities to learn from its master chefs, many of which can be found in settings so exclusive you might end up on first name terms. At MGM Grand, an open kitchen paired with counter seating allows guests of the intimately-sized L'atelier De Joël Robuchon to watch as their meal is created before their eyes by talented staff trained by the Michelin starred “Chef of the Century”.

Another award-winning chef to seek out in Las Vegas is Alain Ducasse. Offering a French and Italian accented menu at Rivea restaurant at the Delano, his exquisite plates are served up alongside incredible 180 degree views from the rooftop Skyfall Lounge. There’s also a 50-seat private dining room, for those looking to host a special celebration or exclusive event.

Connoisseurs of fine liquor should keep in mind the discrete Cognac Lounge inside Restaurant Guy Savoy within Caesars Palace, which offers an extensive range of cognacs. Finally, devotees of New York’s Momofuku can now experience Chef David Chang’s innovative Asian-fusion and international cuisine at the new Momofuku restaurant at The Cosmopolitan of Las Vegas. Sample the signature steamed buns and noodles, or select some dishes from the Raw Bar, such as Momofuku oysters broiled with kimchi, spinach and bacon, or Yellowtail sashimi with yuzu ponzu.
